There are many reasons, but the main one is the description of the four creatures’ behavior:

Day and night they never stop saying:
“‘Holy, holy, holy
is the Lord God Almighty,’
who was, and is, and is to come.”

This is the role of the four evangelists in the Christian tradition. They proclaim the “Lord God Almighty”—Jesus Christ and His gospel for all eternity. These animals were favored symbols by illuminators and Christian artists throughout history. A few great examples of this are provided in the image above. Note the animal in each piece, as it identifies the writer portrayed in each case.
